For this vibrant community-driven, sustainable festival, we operated unique bar experiences featuring tailor-made cabin bars, professional teams, and innovative cocktail menus. We co-brewed elderflower ales with local breweries and used compostable packaging, returnable kegs, and reusable cups to reinforce our commitment to sustainability.
We developed and manufactured a bespoke elderflower cordial for Bill's restaurants. Using lightweight bottles and handpicked elderflowers from our farm, this collaboration added a fresh, artisanal touch to their menus, highlighting our dedication to quality, sustainability, and locally sourced ingredients.
We worked with London’s cult coffee brand, GRIND, to elevate their beverage program. Collaborating with top drink brands, we developed GRIND classics and seasonal variations, showcasing their exceptional coffee. We also enhanced their operations with inventory systems, auditing, and staff training.
Oki-Nami was a Brighton landmark for 25 years, celebrated for its authentic Japanese cuisine and unique cultural fusion. We revitalised their cocktail bar by creating a sensory journey: a bespoke 12-drink manga menu, each page blending art, narrative, and subtle flavour cues to match high-end, innovative drinks.
We came to B.Y.O.C to elevate their left field cocktail concept into a zero waste flavour powerhouse. Expanding their in-house range, we developed zero-ABV reproductions of classic vermouths and amaros, alongside syrups, shrubs, and cocktail bitters. We also upcycled spent fruit pulp and milk solids into unique savoury offerings, reducing waste and innovating at every step.
A Mosaic brand, Stoneham Springs developed premium cocktail ingredients using flavours sourced directly from their farm. From cordials to bitters and custom spirit blends, their creations embodied the essence of fresh, locally grown botanicals, delivering quality and innovation in every bottle. Brand clients included top hotels and restaurants in Sussex, such as The Foragers and My Hotel group.
Junkyard, a pioneer of Nottingham’s craft beer scene, was known for its bold and diverse beer selection. We enhanced their offerings with innovative cocktails, streamlined their inventory system for efficiency, and focused on team training to uphold exceptional service standards.
A cocktail wonderland since 1974 and a finalist in both World Class and 50 Best Bars, the magic of this international gem cannot be understated. We collaborated with them to refresh their cocktail offering and introduced small yet impactful service flow enhancements.
Established in 1999, Brass Monkey is a cornerstone of Nottingham’s cocktail scene, celebrated for its vibrant atmosphere and extensive spirits collection. During their recent renovation, we supported their remodelling by implementing POS and inventory systems, developing bespoke products, and delivering comprehensive staff training and development.
